Ingredients

  • 2 large chicken breasts
  • 2 c salted peanuts
  • 1 c soy sauce
  • 1 c White Whistishire sauce
  • 1 chopped red onion
  • 1 c vegetable broth
  • 2 c Flour
  • 1 1⁄2 c Milk
  • 3 T Butter

Instructions

Chicken Marinade:
combine soy sauce, white whistishire, vegatable broth and red onion. Pierce chicken with fork and set it in marinade.
soak for 1.5 hrs.

Using food processor, process salted peanuts until fine.

I large bowl place 2 cups flour and mix with 1 cup minced peanuts.

place milk in bowl.

remove chicken from marinade and pour marinade in sauce pan.
dip each breast in milk, and then place in flour/peanut mixture. firmley press mixture into chicken on both sides. set asides.
heat 3 TBS of butter in skillet and saute until golden brown on each side. Couple min on each side. Remove and place in 300 degree oven for about 20 min. Times will very based on thickness of meat.

While chicken is baking heat marinade to boil, at the end stir in rest of the minced peanuts.
Serve sauce on side.

Notes

Obviously, this is a very rich dish with the amount of peanuts alone. You can also change this into an appetizer by makeing bite size portions, inserting toothpicks, and serving sauce on the side.
