Easy, Healthy Dish. Cannellini beans instead of potatoes give you a fiber boost
Ingredients
- 12 oz kirt or Flank Steak
- 1 cn (15oz) Cannellini Beans
- 1 large red onion - sliced
- 2 T Balsamic Vinegar
- 2 T Olive Oil
- 2 clv Cloves Garlic - minced
- Lemon Juice
- Salt & Pepper
Instructions
1. In a medium pan over medium heat cook the onion and 1 tablespoon of the olive oil for about 10 minutes or until the onion slices are soft and medium brown. Add the vinegar and cook another 5 minutes or so - I also threw in a few dashes of garlic salt and some pepper.
2. Heat a pot with the remaining Olive Oil over medium heat. Add the garlic, beans, and rosemary and cook for 5 minutes. Use a potato masher of a fork to roughly mash the beans. Add lemon juice and salt & pepper to taste.
3. Heat a grill, pan or cast-iron skillet over high heat. Season the steak with salt and pepper and grill for 3 to 4 minutes per side for medium rare. slice and serve over the beans, and spoon the onions on top. Makes 2 servings.
